Ingredients
For the Lemon Herb Chicken:
- 4 boneless, skinless chicken breasts
- 2 lemons (zested and juiced)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
For the Garlic Mashed Potatoes:
- 1 lb russet potatoes, peeled and cubed
- 2 cloves garlic, minced
- ½ cup milk (or cream for richer flavor)
- 3 tbsp unsalted butter
- Salt and pepper, to taste
- Optional: grated Parmesan cheese
Instructions
Step 1: Prepare the Chicken Marinade
- In a bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and pepper.
- Place the chicken breasts in a shallow dish and pour the marinade over them, ensuring they are evenly coated.
- Let the chicken marinate for at least 15 minutes (or up to 2 hours in the refrigerator for deeper flavor).
Step 2: Cook the Chicken
- Preheat your oven to 400°F (200°C).
- Heat a large oven-safe skillet over medium-high heat. Add a drizzle of olive oil.
- Once hot, add the marinated chicken breasts to the skillet and cook for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let it rest for 5 minutes, then slice or serve whole.
Step 3: Make the Garlic Mashed Potatoes
- In a large pot, cover the cubed potatoes with water and bring to a boil. Add a pinch of salt.
- Reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
- Drain the potatoes and return them to the pot.
- Add minced garlic, milk, butter, salt, and pepper. Mash the potatoes until smooth and creamy. Stir in grated Parmesan cheese if using.
Step 4: Assemble and Serve
- Plate the garlic mashed potatoes and top with slices of lemon herb chicken.
- Garnish with fresh parsley and a squeeze of lemon juice for added freshness.
