- 1 cup green or brown lentils , rinsed and drained
- 4 cups vegetable broth (or chicken broth for non-vegetarian option)
- 1 can (14 oz) diced tomatoes
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp turmeric (optional, for color and flavor)
- Salt and pepper , to taste
- 2 cups water (or more as needed)
- Juice of ½ lemon (optional, for brightness)
- Fresh parsley or cilantro , chopped (for garnish)
Instructions:
Step 1: Sauté Vegetables
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, carrots, and celery. Sauté for 5–7 minutes , or until the vegetables are soft and fragrant.
- Stir in the minced garlic and cook for an additional 1 minute , being careful not to burn it.
Step 2: Add Lentils and Broth
- Stir in the rinsed lentils, vegetable broth, diced tomatoes (with juice), cumin, smoked paprika, and turmeric.
- Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer.
Step 3: Simmer the Soup
- Cover the pot and let the soup simmer for 20–25 minutes , or until the lentils are tender.
- If the soup becomes too thick, add water (about ½ cup at a time) to reach your desired consistency.
Step 4: Finish and Serve
- Once the lentils are cooked through, stir in the lemon juice (if using) for a bright, citrusy finish.
- Taste and adjust seasoning if necessary.
- Ladle the soup into bowls and garnish with fresh parsley or cilantro.
