Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 1 tbsp olive oil
  • 1 medium onion , diced
  • 2 carrots , peeled and diced
  • 2 celery stalks , diced
  • 3 cloves garlic , minced
  • 1 cup green or brown lentils , rinsed and drained
  • 4 cups vegetable broth (or chicken broth for non-vegetarian option)
  • 1 can (14 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp turmeric (optional, for color and flavor)
  • Salt and pepper , to taste
  • 2 cups water (or more as needed)
  • Juice of ½ lemon (optional, for brightness)
  • Fresh parsley or cilantro , chopped (for garnish)

Instructions:

Step 1: Sauté Vegetables

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery. Sauté for 5–7 minutes , or until the vegetables are soft and fragrant.
  3. Stir in the minced garlic and cook for an additional 1 minute , being careful not to burn it.

Step 2: Add Lentils and Broth

  1. Stir in the rinsed lentils, vegetable broth, diced tomatoes (with juice), cumin, smoked paprika, and turmeric.
  2. Season with salt and pepper to taste.
  3. Bring the mixture to a boil, then reduce the heat to low and let it simmer.

Step 3: Simmer the Soup

  1. Cover the pot and let the soup simmer for 20–25 minutes , or until the lentils are tender.
  2. If the soup becomes too thick, add water (about ½ cup at a time) to reach your desired consistency.

Step 4: Finish and Serve

  1. Once the lentils are cooked through, stir in the lemon juice (if using) for a bright, citrusy finish.
  2. Taste and adjust seasoning if necessary.
  3. Ladle the soup into bowls and garnish with fresh parsley or cilantro.
